Regulatory and Labeling

  • FDA 21 CFR Part 101.91. The US gluten-free labeling rule. Establishes the 20 ppm threshold and defines the GF claim.
  • GFCO Certification Standards. Gluten-Free Certification Organization. The leading third-party GF certification; requires <10 ppm.
  • Codex Alimentarius Standard 118-1979. International standard for foods for special dietary use for persons intolerant to gluten.
