Future breeding programs for gluten-free brewing grains should target process-relevant performance, not only field yield. A variety that yields well but malts and brews inconsistently has not been optimized for the right endpoints.

Define breeding objectives with malting and brewing performance endpoints so field success translates directly into production success. Agronomic traits and processing traits should be evaluated together, not in separate silos.
