Future Breeding Goals

Breeding Goals · Aligning field genetics to process and quality endpoints

Future breeding programs for gluten-free brewing grains should target process-relevant performance, not only field yield. A variety that yields well but malts and brews inconsistently has not been optimized for the right endpoints.

Priority Traits

Breeding TargetWhat It Enables
Tighter kernel size uniformityMore even steeping hydration and modification — less batch-to-batch noise
More predictable hardness rangeStable milling energy requirements and consistent particle size profiles
Improved germination evenness for maltingMore consistent modification and flavor development across the malt bed
Better compositional alignment to extract and quality targetsHigher extract efficiency and more predictable foam, flavor, and stability
Reduced defect susceptibility under real storage conditionsLower quality risk in transit and at the maltster or brewer

Program Design Principle

Define breeding objectives with malting and brewing performance endpoints so field success translates directly into production success. Agronomic traits and processing traits should be evaluated together, not in separate silos.
