Gluten Free Brewer is being built to become the definitive technical knowledge resource for brewing real beer without gluten.

The project draws on more than two decades of brewing research, experimentation, and industry experience — including the development work behind Bard's Beer, the first gluten-free beer released in the United States.

This site is designed as a long-term technical reference for brewers, brewery founders, formulators, and serious brewing enthusiasts who want to understand the science and craft behind gluten-free beer.

Why This Site Exists

Most information about gluten-free brewing online is:

  • outdated
  • or written without real production experience

Brewing beer without barley introduces a completely different set of problems involving starch conversion, enzymes, mash chemistry, fermentation behavior, and ingredient sourcing.

This site exists to document the real technical knowledge required to solve those problems.
