Millet Research Directory
Millet occupies the opposite position from sorghum: commercially, millet malt is the working base of much modern US gluten-free craft brewing — produced, sold, and brewed on today — while its published brewing science is thinner than sorghum's decades-deep academic corpus. This directory maps that inverted landscape honestly: a strong commercial layer, a concentrated research layer, and the gaps between them.
Coverage is US-centered by design. This site works in the American supply chain, with international anchors included where the science is foundational.
The rules every directory runs on, what an entry is, what a listing means, and who owns a person, are on one page: How the directories work. Corrections and removals: contact us.

A structural difference from sorghum: we know of no national millet checkoff. Sorghum's producer-funded research board has no millet equivalent, so millet research leans more heavily on federal and state programs, and the grower voice runs through associations rather than a checkoff. That absence shapes this whole page.
5. Industry & Supply Chain — the commercial layer, where millet leads every other gluten-free grain25 entries
This is where millet's map inverts sorghum's: commercial gluten-free millet malt exists today — grown at scale on the High Plains, malted at dedicated facilities, and brewed into award-winning beer by dedicated gluten-free breweries. The chain runs end to end, and every link below is documented.

Research gaps — where the field's coverage runs out
These are the gaps we have found and documented. If we have missed something, tell us:
- Millet's gap is the mirror of sorghum's. Commercial gluten-free millet malt is produced at scale today, but on a thinner published brewing-science base than sorghum's decades-deep corpus. Production runs ahead of the public literature.
- The same information layer is missing. As with sorghum, we have found no widely used per-lot reporting practice for millet malt buyers, the problem this site's Lot Reporting Standard exists to solve, across gluten-free grains.
- No national millet checkoff that we know of — millet research has no producer-funded board comparable to sorghum's, thinning its dedicated funding channels; the grower voice runs through associations instead.
- Nobody breeds millet for brewing, that we have found. The proso programs listed above, public and private, breed for High Plains production; as of 2026-10-17 the one public program on our breeders roster described as breeding for malting and brewing works on sorghum, not millet.
- No released millet malting dataset that we have found. Agronomic and genebank data exist, and so does a published varietal study — 24 proso millet varieties malted under one regimen with a full malt-quality panel (2010), alongside pearl and finger millet studies. What we have found no trace of is released row-level data, the millet equivalent of the Madison screening's tables, or any figures for the commercial millet malt US brewers buy. An earlier version of this line said no millet malting dataset existed at all. An open, fundable gap, made sharper by the fact that millet is the grain US gluten-free brewing actually runs on.
- No current grant for malting or brewing millet that we have found. Our 2026-10-14 search found a current millet and buckwheat grant for gluten-free flour (SARE ONE26-469, listed under Projects & Grants), but we have found no current grant for malting or brewing millet .
What to do while the gaps stand. A brewer buying millet malt today does not get to wait for the literature. Millet Malt in Gluten-Free Brewing carries the working guidance and a lot-evaluation checklist, and says plainly what not to infer — extract, diastatic power and free amino nitrogen are not transferable between lots on the strength of a supplier description. Sorghum vs millet malt covers the substitution question directly. None of that is settled science and none of it is presented as such; it is what the record supports, which is a different claim and an honest one.
