Gluten-free brewing has no industrial R&D department, so the category's real experimentation happens at home; this page maps what that field has written down, where it buys, and what it has never measured.

The labs study grains, the maltsters run production, and the category's actual experimentation — new grists, enzyme schedules, malting trials, style recreations — happens in garages and kitchens. This page maps that practice's record: the bodies that organise it, the people who wrote it down, its supply and equipment layer, its literature, the connections its evidence supports, and the gaps where its coverage runs out.

Start here — the safety literature this practice has never absorbed. Home malting holds grain warm, wet and germinating for days, which is also how you grow fungi. The published surveys of sorghum-based malt, wort and beer found aflatoxins, fumonisin B1 and zearalenone; no home-malting guide we have found mentions any of it (Supply & Methods, Literature, How the field connects, Research gaps).

Why gluten-free brewing needs added enzymes at all — the club's published figures put barley malt at 418 °WK against malted sorghum's 54 °WK, roughly one-eighth. Rice malt is listed at 231 °WK, which sits oddly against its reputation as the inert grain (Supply & Methods, How the field connects).

Where the money actually is — the awarded grants that have paid for gluten-free malting and brewing research ($150,000 at Nevada, $53,514 at Penn State, both to universities), the open routes nobody in this field has applied to, the two sized to a practitioner rather than a farm, the education funding that is reliably available, and the one obvious-looking program that excludes these grains outright (Funders & Programs, How the field connects).

1. Institutions — the clubs, forums, and bodies that hold this practice's knowledge

This field has no universities and no laboratories. Its institutions are a club, a forum, and a shop, which is the finding, not a shortfall in the search.

Zero Tolerance Gluten Free Brewing. The category's dedicated homebrew club, and the only body we have found maintaining a structured gluten-free brewing knowledge base rather than a thread archive. The field's supply hub is also its press and its data publisher: step-by-step tutorials by skill level, the home-malting guide it hosts, a maintained recipe library, and community-generated measurements. Crowdfunded science, as the route this field actually has. Experiment is the largest crowdfunding platform for scientific research: 937 projects and roughly $8.9 million since 2012, a 44% funding success rate, and an average successful budget around $4,000, on an all-or-nothing model with funded projects required to publish results. We have found no externally funded research project operating at homebrew scale in this category. That is a documented absence, not an unfinished search.

4. Funders & Programs — who pays for it (described, never endorsed)

Two kinds of entry, and the difference matters. Awarded entries are grants that have actually been paid out for gluten-free malting and brewing research. Open routes are programs whose published scope could cover work documented here but which nobody in this field has applied to that we can find. Described, never endorsed, and never a promise that an application would succeed.

An earlier version of this section said no funder had ever paid for this work. That was wrong. This directory documents the awards below on its own other pages. What is true is narrower: the money has gone to universities, not to practitioners, and we have found no grant awarded to a homebrewer or home maltster for work at their own scale.

A three-year, $150,000 Nevada Agricultural Experiment Station award to Melinda Yerka and John Baggett, inside roughly $650,000 supporting the wider sorghum breeding program. It investigates malting technique and brewing process for local breweries, with gluten-free demand named as the motivation, which is this page's own subject matter, funded. Penn State — gluten-free beer from unmalted grains. A $53,514 award to Darrell Cockburn, part of roughly $300,000 in beer grants across four Penn State researchers, evaluating unmalted gluten-free grains and enzyme supplementation for fermentable sugars and free amino nitrogen. SARE — Farmer/Rancher and Producer Grants. The best fit on this page. SARE funds producers running their own on-farm trials: roughly $15,000 for an individual and up to $30,000–$35,000 for teams or larger regional awards, depending on region. It has already funded value-added work on teff, one of this directory's own grains. A grower trialling malting sorghum or millet for the gluten-free market is squarely inside the published scope. USDA Value-Added Producer Grants. Up to $75,000 for planning and $250,000 for working capital, for producers and producer cooperatives adding value to a raw commodity. Malting your own grain is the textbook definition of adding value to it, and partnerships are prioritised. Scale suits a small malthouse rather than a kitchen. The program · Verified 2026-08-26

USDA NIFA Small Business Innovation Research (SBIR). Phase I awards of up to $175,000 for research and development, plus up to $6,500 for technical assistance such as a feasibility or marketing study. Aimed at food, agriculture and rural innovation carried out by small businesses, the route for a small maltster or gluten-free brewery rather than an individual homebrewer. Cooperative Extension, and the precedent that matters most here. The National Center for Home Food Preservation was, in its own words, "established with funding from the Cooperative State Research, Education and Extension Service, U.S. Department of Agriculture (CSREES-USDA)" to "address food safety concerns for those who practice and teach home food preservation and processing methods." That is federal money for a home-scale food process, on safety grounds. Home malting is the same shape of problem, and unlike home canning, its output goes disproportionately to people with a diagnosed medical condition. USDA Specialty Crop Block Grants do not cover these grains. The Specialty Crops Competitiveness Act defines specialty crops as fruits and vegetables, tree nuts, dried fruits, horticulture and nursery crops. Grains are excluded, and sorghum appears on USDA's ineligible list. Hops, oddly, is a specialty crop. Crowdfunded science. The largest scientific crowdfunding platform reports 937 projects and roughly $8.9 million since 2012, a 44% success rate, and an average successful budget near $4,000, on an all-or-nothing model with funded projects required to publish results. — What is still genuinely absent —

No brewing body, patient organization or agricultural funder that we have found runs a program aimed at gluten-free brewing specifically. Every route above is general-purpose and would have to be argued into. That remains the honest finding, and it is a smaller and more useful finding than "there is no money."

5. Supply, Equipment & Methods — the home bench: where a homebrewer buys, and what they actually run

— Diastatic power, as the community measures it —

These are the club's published figures, not ours. They are the clearest quantitative answer we have found to why gluten-free brewing needs exogenous enzymes at all, and they come from a practitioner wiki rather than a journal.

Malted sorghum sits at roughly one-eighth of barley's diastatic power. The club's reference gives barley malt at 418 °WK and malted sorghum at 54 °WK. That single comparison explains the entire enzyme shelf above: it is not that sorghum converts badly, it is that it brings roughly an eighth of the enzyme load a brewer coming from barley assumes. Rice malt is listed far higher than sorghum — 231 °WK. The same reference puts rice malt above four times malted sorghum, and above sweet potato at 207 °WK (63.7 °Lintner). Worth flagging because this directory's flavor page treats rice as the deliberately neutral grain. Neutral in flavor turns out not to mean inert in enzymes. Millet is the club's pick for highest endogenous diastatic power. In the wiki's words, "between millet, sorghum, rice and buckwheat, millet appears to have the highest endogenous (naturally occurring) diastatic power." The community's published enzyme doses, per pound of grain. — What the malting literature says a home maltster controls —

Germination temperature is the lever, and it has been measured. Chiba, Bryce and Goodfellow examined how germination temperature governs proteolysis in sorghum and millet through malting and mashing. Protein breakdown is what releases free amino nitrogen, the precursor this directory's flavor page identifies as the aroma bottleneck. Four stages, and only one specialized tool. Steeping, germination, drying and kilning. The homebrew press's own assessment is that the only genuinely specialized piece of equipment a home maltster needs is a food dehydrator — which is why this practice is possible in a kitchen at all. Steeping, as a moisture target rather than a soak. The published approach moves grain from its storage moisture to the level germination requires using several short wet steeps of 4–6 hours with air rests between them, rather than one long immersion. A modified storage container fitted for aquarium air hoses lets a home maltster bubble air through the steep and push humidified air through the air rests and germination, the documented DIY answer to the one thing commercial steeping vessels do that a bucket does not. Germination, and why turning matters. Held warm and humid, with the grain turned regularly. Turning is not tidiness: it detangles rootlets that otherwise grow into clumps, and disperses the heat and carbon dioxide the grain's own respiration produces. Knowing when germination is done. The published field test is that rootlets reach roughly the length of the grain — a judgement a home maltster can make by eye, with no instrument. BYO on home malting · Verified 2026-08-26

Drying and kilning, as a moisture endpoint. The published guidance takes drying through a dehydrator over several hours at a low grain-bed temperature, then raises the temperature for the kilning stage. A controlled kiln, built rather than bought. Documented DIY malt-kiln builds pair a heat source with a temperature controller and logging, so a kilning schedule can be held and recorded instead of estimated, which is also what makes a batch comparable to the next one. Tight temperature control, ±1°F or better. Enzymes work in windows, and the conversion holds decide the sugar profile. Without it: drifting holds, inconsistent attenuation, and batches that cannot be compared with each other, which is fatal to a field whose only research method is comparing batches. A homebrewer's gluten-free beer has no category of its own; the same beer brewed commercially has three. GABF lists Classic, Hoppy and Specialty gluten-free categories, and requires entrants to be licensed commercial breweries. Homebrew competitions run under BJCP, where the same beer goes into a general alternative-grain category. The segment is taken seriously enough for three commercial categories and not yet seriously enough for one homebrew category, in a field where, as this page's Institutions section records, the homebrewers are the research layer. The home-malting guides already name the failure mode; they just do not name what it costs. The published guidance is explicit that grain spoils if kilning does not bring moisture down to roughly 3–5%, and equally explicit that germination beds must be turned to disperse heat and carbon dioxide and prevent clumping. The money exists, and some of it has already been spent — just not here. Two US universities hold awards aimed squarely at gluten-free malting and brewing: $150,000 at Nevada for malting technique and brewing process, $53,514 at Penn State for unmalted-grain conversion. A retailer is doing an institution's job. The tutorials, the hosted malting guide, the recipe library and the community measurements all sit with a shop. That is what happens to a field with no university program, no trade association and no funder: its written record accumulates wherever someone has a reason to host it. Sections 3 and 4 are nearly empty, and that is the finding. No funder, and no externally funded project at this scale. Every other page in this directory can name who paid; this one cannot. Research gaps — where the field's coverage runs out

These are the gaps we have found and documented, if we have missed something, tell us:

Home malting has materials but no home. The knowledge exists: a hosted tutorial, magazine techniques pieces, working forum threads, the malting chapters of the category's book, but it is scattered across sites, and we have found no organized home-malting community, no curated collection, and no shared quality or safety baseline. This site's malting section carries the acceptance and safety gates; we have found no community practicing against them.

And the calendar it borrows is not built for it. Learn to Homebrew Day, Homebrew Con and the BJCP competition circuit are all real and all general. A gluten-free brewer attends the field's events as a guest of a practice built on barley, judged against guidelines written for barley beer. That is not a complaint about those bodies; it is the reason this page's Standards and Events section had to be filled with somebody else's.

The experimental record is unmeasured. The community brews constantly but publishes almost no measurements: gravities, pH, extract, sensory panels. The field's data layer is this site's research asks, written so any kettle can run them; a homebrew batch with honest numbers is a research contribution here.

No recipe database carries provenance. Recipes circulate through the club wiki, the book, and shop pages, but we have found no gluten-free recipe collection that records what was measured when the batch was brewed, the gap our recipes-as-research approach exists to close.

No homebrew competition category means no aggregated sensory record. Commercial gluten-free beers get judged in three dedicated GABF categories and generate scored feedback against gluten-free peers. Homebrewers get judged in a general category against a description written for other grains. The result is that the largest population of gluten-free brewers produces the least comparable sensory data, and we have found no mechanism that would aggregate it even if they produced it. Practitioner process data exists in single figures. Searching again, the published layer is: one practitioner publishing germination and kilning parameters openly, one hosted malting tutorial with per-grain procedures, and one club wiki carrying comparative diastatic-power figures and enzyme doses. Three sources. Everything else we have found is thread discussion. For a field whose entire claim to a research directory entry is that it runs the experiments, that is close to what a few people can produce between them, and the club wiki's headline comparison carries no published measurement series behind it, so even the best of it is a figure without a method. The money goes to universities, not to practitioners. Gluten-free malting and brewing research is funded: a $150,000 Experiment Station award at Nevada for malting technique and brewing process, $53,514 at Penn State for unmalted-grain conversion. What we have not found is a single grant awarded to a homebrewer or home maltster for work at their own scale, or any program that names practitioners as eligible applicants for brewing research.

So the practitioner layer stays self-funded while the academic layer does not, and the two produce different kinds of evidence: controlled studies on a few grains from the universities, and many uncontrolled batches from the homebrewers.
