Testing Without an In-House Lab

You don't need an in-house lab to make a trustworthy gluten-free beer. You need to know which outside labs to use, and at which point in the chain. Most small breweries we've known never had a lab bench — they had a phone number and a shipping label.

Quality assurance can read like it assumes a laboratory down the hall. It does not. The gluten-free trust chain was built on third-party testing — independent labs that sample grain, certify allergens, and analyze finished beer. Using them is normal, affordable, and often more credible than testing yourself, because the result comes from an outside party with no stake in the answer.

Retain a sample at every step. A test you cannot repeat on a held sample is a test you cannot defend.

FGIS — Official Grain Inspection

The first gate is grain, and FGIS is how a brewery or maltster gets official, independent sampling and grading without owning any of it. The sample is drawn to a standardized method, graded, and lab-tested — so the number at intake actually means something. Because the value is as much in how the sample is drawn as in the test itself, FGIS gets its own page.

FARRP — Allergen Certification

FARRP, at the University of Nebraska, is an allergen research and testing program that runs gluten assays and issues certification. Its role in the chain is to verify the pre-fermentation inputs — grain and malt — where a gluten test can actually read the material (see Gluten Testing Methods and Their Limits). A FARRP result below the reporting limit, with a certificate, is the kind of independent verification a serious gluten-free claim is built on. Engagement is simple: draw a representative sample, ship it, and keep the certificate with the lot's batch record.

White Labs — Finished-Beer QC

White Labs runs a full finished-beer panel: real and apparent extract, attenuation, ABV, color, pH, IBU, diacetyl, and a microbiology screen for wild yeast and bacteria. This is the analytical side of the packaged-product release test — it confirms the lot is sound and consistent. Note what it does not do: a finished-beer panel does not establish the gluten-free claim, because fermentation defeats the common gluten assay. That proof stays upstream.

The Practical Points

  • Sampling beats testing. A perfect assay on a bad sample is a bad result. Draw representative samples; where an official method exists (FGIS), use it.
  • Test where it still matters. Incoming input, cast wort, packaged product — each catches a different failure. See Gluten Testing Methods and Their Limits.
  • Costs are modest and they change. In Bard's era, having FGIS come out to sample ran about $35 per call — cited as a real-world reference point, not a current quote. Confirm current fees, turnaround, and availability directly with each provider.
  • Keep the paperwork. COAs, certificates, and grade sheets are part of the pre-fermentation evidence the claim depends on. File them with the lot.
