Grain and Malt Storage
Storage is not a waiting room. Between acceptance and use, grain and malt can pick up gluten cross-contact, lose germination to heat and moisture, grow mold, or lose their identity in a shared bin. Control all four.
Keep the chain gluten-free
The fastest way to lose a gluten-free lot is to store it where gluten grain has been. Cross-contact in storage is usually invisible — a few kernels of barley in an auger, dust in a shared silo, residue on a scoop — and it does not announce itself.
- Dedicated storage. Bins, silos, totes, and bags used for gluten-free grain and malt should never hold wheat, barley, rye, or oats. If a facility is truly shared, cross-contact must be controlled by documented cleanout and verification between products, not by assumption.
- Dedicated handling equipment. Augers, conveyors, legs, scoops, and vacuums move residue between lots. Keep them dedicated, or clean and verify them.
- Dust and vector control. Airborne grain dust migrates; so do pests carrying grain between stores. Manage both — gluten grain held nearby is a contamination pathway even without direct contact.

Preserve viability
Dead grain will not malt, so storage protects the germination you paid for at Gate 1. In the Bard's standard, contracted sorghum was held in isolated bins at harvest and moved into managed storage before summer heat could damage it.
- Moisture and temperature are the two that kill viability and invite mold and mycotoxins. Hold grain at a safe, stable moisture; monitor and aerate; watch for hot spots.
- Time and rotation. Viability declines with age and abuse. Rotate first-in, first-out, and set a maximum time on the floor.
- Condition checks on a schedule — moisture, temperature, and a spot check for mold or off-odor — catch a developing problem while it is still one bin.
Preserve identity
The source/bin ID from Gate 1 stays with the lot, and storage adds its own record: where it is, how long it has been there, its condition in and out, and any cleanout verification for a shared space. A lot you cannot locate and trace has effectively failed storage — you cannot investigate a contamination you cannot find.
Malt is stored, too
The same rules apply after malting. Finished malt is stored and further processed in a dedicated gluten-free environment, with its own batch ID, condition control, and rotation — the chain does not relax once the grain becomes malt.
