FGIS Grain Sampling and Testing

FGIS is how a small brewery or maltster gets official, independent grain sampling and grading without owning a lab or a probe. It is the anchor of the trust chain: if the sample at the first gate is drawn right and graded right, everything downstream has a fair start.

What FGIS Is

The Federal Grain Inspection Service (FGIS) is the U.S. Department of Agriculture program responsible for official grain inspection, sampling, grading, and weighing under the U.S. Grain Standards Act. (FGIS functions now sit within USDA's Agricultural Marketing Service.) Much routine work is carried out by FGIS-overseen official agencies — state or delegated inspectors licensed to the same federal standards — so "getting FGIS out" often means the local official agency operating under FGIS rules.

The point for a brewery: it is an independent, standardized way to verify what actually arrived, done by someone with no stake in the shipment.

Why the Sampling Matters More Than the Test

A grain lot is not uniform. Moisture, damage, foreign material, and contamination vary through a bin or a rail car. A single grab from the top can miss all of it. So the value of official inspection is as much in how the sample is drawn as in the lab work that follows:

  • Representative sampling. The lot is sampled across its depth and spread — probe sampling in storage, or diverter/stream sampling as grain moves — so the drawn sample reflects the whole lot, not one convenient corner.
  • A standardized method. Because the draw follows an official procedure, the grade and the lab number describe the lot, not the sampler's luck.
  • Chain of custody. The official sample and its paperwork tie the result to a specific lot, date, and location — exactly what the batch record needs.

A perfect assay on a bad sample is a bad result. Official sampling is what makes the number defensible.

What Gets Tested

Through FGIS and its associated labs, an intake inspection can cover:

  • Grade factors — test weight, moisture, total and heat damage, foreign material, and broken kernels, resolved into an official grade.
  • Mycotoxins — vomitoxin (DON) and aflatoxin screening, which matter for both safety and malt performance.
  • Identity and condition — confirmation that the lot matches what was ordered.

Germination and purity were run through both routes in Bard's experience — the North Dakota State Seed Lab and FGIS. Depending on the region, the lot, and turnaround, germination testing can be arranged through a state seed lab, an FGIS-overseen official agency, or FGIS itself; Bard's used both the seed lab and FGIS. What It Cost, and What to Confirm

In Bard's era, having an inspector come out to sample ran about $35 per call — a genuinely low bar for official, independent verification, and one reason a brewery without a lab could still run a credible intake gate. Treat that figure as a historical reference point, not a current quote: confirm current fees, turnaround, service area, and exactly which tests are offered with your local FGIS field office or official agency before you plan around it.

Why It Anchors the Trust Chain

Gluten-free integrity starts at the grain. If the first gate — grain source and acceptance — is verified by an independent official inspection instead of a supplier's word, every later gate inherits a solid foundation. FGIS is how a small operation buys that credibility for the price of a sampling call.
