This site contains my opinions, methods, judgments, experiments, technical observations, and a fair amount of blunt language.

If that bothers you, this may not be your site.

If you use ideas, processes, recipes, workflows, sourcing decisions, labeling language, or brewing methods from this site, you are responsible for your own decisions. Not me. Not this site. Not anybody reading along from the cheap seats.

This site is here to share hard-earned knowledge, not to babysit every possible use of it.

What This Site Is

This site is an educational and technical resource based on my experience, judgment, research, experimentation, and opinion.

  • It is not a medical service
  • It is not legal advice
  • It is not regulatory approval
  • It is not a substitute for doing your own homework

I call things the way I see them. Sometimes strongly. That does not magically turn this site into professional advice tailored to your situation.


Opinions Mean Opinions

A lot of what is on this site is opinionated on purpose.

When I draw a hard line between truly gluten-free beer and gluten-reduced beer, that is how I define and discuss the category on this site. When I say certain ingredients are out, that is the standard I am using here. When I call something sloppy, misleading, weak, or bullshit, that is my judgment.

You are free to disagree.

You are not free to pretend my opinions are a warranty, a legal opinion, a medical opinion, or a regulatory ruling.

Nothing on this site is medical advice.

Nothing here is intended to diagnose, treat, cure, or prevent any disease or condition. Nothing here is a promise about what any person can safely eat or drink.

If you have celiac disease, a wheat allergy, non-celiac gluten sensitivity, or any other health issue, talk to a qualified medical professional who actually handles that kind of thing.

Do not treat a brewing site like your doctor. That would be dumb.


Nothing on this site is legal advice, compliance advice, labeling approval, or regulatory clearance.

Food, beverage, alcohol, labeling, manufacturing, and advertising rules vary by country, state, province, locality, and agency. They also change. Sometimes for good reasons. Sometimes because bureaucracy is a lifestyle.

You are responsible for checking the laws, rules, labeling requirements, claims standards, production requirements, tax rules, and compliance obligations that apply to your situation.

Definitions Used on This Site

This site uses its own working definitions, distinctions, and category boundaries so the technical discussion stays clear.

That includes how I use terms like:

  • gluten-free beer
  • truly gluten-free beer
  • gluten-reduced beer
  • contamination
  • safe ingredient systems
  • brewing grains

Those definitions reflect my framework for this site. They are not a promise that every regulator, brewery, trade group, lab, lawyer, doctor, or internet loudmouth uses the same definitions.


This site may link to other websites, articles, vendors, tools, organizations, or references.

A link does not mean I endorse everything on that site. It does not mean I control it. It does not mean they will not change it, break it, ruin it, or post something stupid later.
