Homebrew: The Research Bench

Homebrewers are this site's research bench. You brew more batches, change more variables, and try more ideas per month than most production breweries can — and gluten-free brewing has more open questions than answers. This section translates our production process to your scale, and asks you to tell us what happened.

Most of this site is written from twenty years of commercial production. That's the strength and the limitation: production runs are big, expensive, and conservative, so a brewery tests maybe a handful of real variables a year. A homebrewer can test that many in a month.

So we're not publishing a beginner's corner here. We're publishing our actual process at your scale, the reasoning intact, and the open questions attached — because the answers are more likely to come from a garage than from us.

Why we call you researchers

Because the label fits. When you brew a documented batch, change one variable, and report what happened, that's data — and in a field this thin, it's data nobody else has. The published record on this site exists because somebody kept notes; the next chapter needs the same thing from more benches than one.

What makes a batch report useful: what you changed, what you held steady, what you measured, and what actually happened — including the failures, which are often worth more than the successes. Gravity readings, mash behavior, runoff, fermentation curve, and honest tasting notes beat a five-star review every time.

The open questions are collected on Research Asks — several of them are homebrew-scale experiments waiting for somebody with a kettle. If you run something from this section, tell us what happened. Results that contradict us are especially welcome — a correction improves the record, and being politely wrong in public helps nobody.

Credit where it's due

The gluten-free homebrewing community has been solving these problems in public for years, and one hub in particular carries a lot of that work: glutenfreehomebrewing.com runs a recipe database, a specialty gluten-free malt catalog, and a blog with genuine community-generated measurements — grain water absorption, PPG and color values, milled-grain comparisons. That's real data, generously published, and their enzyme material independently confirms the doctrine this site runs on: gluten-free malt does not convert itself.

A second hub worth knowing: the Zero Tolerance Gluten Free Homebrew Club wiki maintains a community enzyme reference — products, dose ranges in mL/lb, working temperatures and pH windows — assembled collaboratively and linked back to members' own experimental threads.

It is worth reading for a reason beyond convenience. That community, working independently of us, converged on the same enzyme toolkit our production protocols use — Termamyl, Ondea Pro, Fungamyl 800L, AMG 300L, SEBAmyl. Nobody coordinated that. When a commercial brewery and a homebrew community arrive separately at the same shortlist, it is decent evidence the shortlist is right.

We're not trying to replace either of them. They have the recipes, the community, and a lot of hard-won practical detail; we have production records, laboratory data, and protocols. Use all of it.
