Hi, I'm Craig.

Developer. Founder. Brewer. Celiac. And a guy who got tired of being told gluten-free beer had to suck.

A long time ago, we founded Bard's to prove gluten-free beer could be real beer, and I invented the first production gluten-free beer built from gluten-free malt. Not syrup. Not bullshit shortcuts. Malt. Real brewing. Real process. Real flavor.

I came at this from two directions at once. One side of me was building software and systems. The other side was obsessed with solving a brewing problem that a lot of people either ignored or flat-out thought couldn't be solved.

I like hard problems. I like systems. I do not have much patience for lazy answers.

The result is more than twenty years of hard-earned gluten-free brewing and malting knowledge, the kind you get from doing the work, breaking things, fixing them, and learning where the real problems actually start.

A lot of what makes good beer actually good comes back to malt. That was true centuries ago, and it's still true now.

If you want a gluten-free beer that drinks like real beer instead of some sad compromise, you have to take that seriously.

That idea sits at the center of my work, and it sits at the center of this site.

So what am I building here?

I’m building the resource I wish had existed when I started.

This site is my attempt to open source the know-how I’ve developed over more than two decades of work in gluten-free brewing and malting. I want brewers, founders, experimenters, drinkers, and curious weirdos to have access to the real knowledge. Not just the polished version. The useful version. The version that helps you understand what matters, what breaks, what costs too much, what tastes wrong, what scales badly, and what actually works.

This is not a brochure site.

It's not here to pose.

It's here to teach.

You'll find documentation, process thinking, technical background, market context, practical lessons, and probably a few opinions delivered with less diplomacy than a PR person would recommend.

Good. That's intentional.

I'm not trying to sound polished. I'm trying to be useful.

And since we’re being honest, yes, AI helped me organize and write parts of this site.

Good.

My writing is messy. My experience is not.

The goal for launch is simple: get the hard-earned knowledge out of my head and into pages people can actually use. The docs come first. Future AI tools may come later if they genuinely help people move through the material faster, but I am not pretending a chatbot is the point.

AI helps me turn a pile of notes, memory, opinion, and technical scar tissue into readable pages without losing my mind in the process.

The ideas are mine.
The experience is mine.
The opinions are definitely mine.
The help turning it into readable pages? Yeah, I'll gladly take it.
